Easy lowish carb chicken soft tacos!

I’ve dabbled in the low carb life and I have found that over time, I keep running back to familiar ways of eating.  I’ve never been comfortable with an either/or, black and white type of existence.  The minute I say I can’t have something is the minute I want it more than I have ever wanted anything in my life. Recently I found that compromise is at the heart of progress and I couldn’t have lost over 50 lbs without it.

So I know that my body does better with less carbs and I know that my body (and my mind) pretty much hates life without carbs.  I know many of you can do it and more power to you, but for me, I would rather have lowish carb meals.  Lowish carb is the label I created to describe any meals where the main focus was low carb ingredients, but with a more carby flair.

Tortillas… I remember the first time I had one.  In elementary school one of the moms came to class and cooked homemade tortillas slathered in butter for each kid.  I fell in love in an instant!  The lack of tortillas and the horrible zero carb substitutes would have made eating lowish carb impossible but for the Mission Low Carb tortillas (the La Tortilla Factory tortillas are very good too).  And one of my favorite ways to enjoy tortillas in a lowish carb way is to eat chicken soft tacos!

So on to the recipe… this is an extremely easy slow cooker recipe that gives you restaurant style shredded chicken to pair with your low carb tortillas.  Of course, if you don’t want to eat low carb then have a glorious full carb strength tortilla (homemade version is best!).  Lowish carbers can get away with topping your soft taco with shredded cheese, chopped onion, cilantro, hot sauce, sour cream and avocado.. YUM.

Carb content will vary based on type of tortillas and which condiments are used.  Also, some taco seasonings contain carbs, so be sure to check the packets for carb content if you are concerned.

Instructions
  1. 1. Add chicken breast to slow cooker.
  2. 2. Dump oregano, taco seasoning, green chile, rotel tomatoes and hot sauce onto chicken.
  3. 3. Lightly stir the mixture with a large spoon to evenly distribute.
  4. 4. Set slow cooker to Low, 8 hours.
  5. 5. After the chicken has finished cooking, take 2 forks and shred the chicken. The chicken should shred very easily.
  6. 6. Stir chicken mixture and serve with a slotted spoon (to drain juices) onto heated tortillas.
  7. 7. Add all or any of the suggested toppings.
