I don’t know about the rest of you but I am insanely curious when it comes to knowing what everyone else eats.  Every time I go to a restaurant I must know what people are thinking about ordering and when I go to the supermarket I eye everyone else’s carts.  I just love variety and wonder if there is something out there that I may be missing!

In case there is anyone else out there that shares this curiousity, I’m offering up a post of the menu I have planned for the week.  This week I am working on reducing carbs (not too low) as I start my efforts to lose another 30 lbs. Last year I lost about 40 and another 15 earlier this year.  Unfortunately I gained a few back over the summer but it is coming off rapidly.  So this week I am cooking up a few of my go-to lower carb dinners and trying a few new things, as well as two new lower carb desserts.

Menu:

Monday:  Low carb shepherd’s pie – tried and tested, a family favorite!

Tuesday: Beef stew and low carb cheddar biscuits – trying something new this night!

Wednesday: Spaghetti squash carbonara – another tried and tested, family favorite!

Thursday: Southwest chicken salad with lowish carb quesadillas

Friday: Lowish carb breakfast burritos

Saturday: Breakfast for dinner (eggs, bacon, sausage, hash browns, pancakes)  (SPLURGE DAY!!)

Sunday: Lowish carb Burrito supremes

Desserts:

  • Low carb black bean brownies
  • Lowish carb strawberry cream cheese chimichangas
  • Sugar-free jello with sugar-free whipped topping

Kids lunches:

  • Chicken salad wraps or roast beef and cheddar sandwiches
  • Cherry tomatoes and cucumbers with sour cream dip
  • Black bean corn chips
  • Oranges and strawberries
  • Mixed nuts

Other:  We buy a big container of the vanilla Oikos triple zero greek yogurt.  One of my kids eats a little for his breakfast, and I supplement my dinners with a little bit of the yogurt with collagen mixed in.

As you can see I go a little heavy on the southwest flavor (my favorite).  But many weeks we also eat Indian or Asian dishes.  Breakfast for dinner is a must almost every week.  My kids look forward to it… okay, we all look forward to it.
